Spicy Chilled Mexican Shrimp Cocktail

This is one of my favorite dishes to have ready in my refrigerator during the holidays when I expect company as it makes a very nice snack, appetizer or even a meal. Mexican Shrimp Cocktail, otherwise known as Cóctel de Camarónes, doesn’t resemble an American shrimp cocktail at all. I’ll bet you’ll find this variation way more tasty and exciting! Mexican Shrimp Cocktail is almost like a “salad in a glass,” chock full of crunchy vegetables and shrimp in a spicy, tangy tomato sauce Ingredients: 1 medium white onion 6 large cloves garlic, coarsely chopped 2 tablespoons salt, plus more to taste 1 tablespoon freshly ground black pepper 1 pound large shrimp, peeled, deveined and tails removed exc
