The clay casseroles with lid are known as “arrozera”(rice cooker) with a diameter of approximately 30 centimeters and a height of 15-20 centimeters. The larger casseroles being the most common are typically used for mole or stews and can have a depth of up to 50 centimeters. In our store catalog you will find two different styles, the arrozera and molera. The description above is and indication for their use; however, these can be used for the preparation of any meal just as long as they are cured before use. It is recommended that if you utilize a clay casserole for cooking, the casserole is removed from heat a few minutes earlier as clay maintains the heat perfectly and can finish cooking your meal without the use of continued heat. These can be used at very high temperatures as well as being used for stove-top or oven. Clay casseroles are fragile and therefore it is recommended that they are stored in a safe place and while handwashing, caution is used.
