The main passion for Chef Martin is Pastry and Baking, he started
baking since he was a child at home with his Mother latter to be one
of the top Pastry Chefs in St Louis creating brands such as Piccione
Pastry and show casing his Sugar sculptures and pastry creations in
top galleries across the country.
Chef Martin continues to push the importance of scratch baking and
old classic techniques not only on his baking but on his work with Ice
Carving, Tallow, Sugar and chocolate and he is often showcasing and
teaching the Mexican Pan Dulce to the USA as he is passionate about
his roots and his upbringing.
