Potato Cakes “Tortitas de Papa”
This is one of my favorite ways to use up leftovers or create a snack and keep it in the refrigerator as they are good hot or cold.
The use of the rice flour also makes these yummy treats a gluten free alternative for a great side dish or snack.
Ingredients:
2 cups mashed potatoes (approximately)
1-2 eggs
1/4 cup Rice flour
To taste: Salt, Pepper, Garlic
Optional: Onion, Chives, Chiles, Cheese, Corn
Sour cream or a fresh “Pico de Gallo” for garnish to the side
Olive oil, for frying
Directions:
Mix mashed potatoes, egg, rice flour, salt, pepper, garlic, and any optional ingredients, into mashed potatoes.
Preheat skillet and add a couple of tablespoons of olive oil.
Make sure the mixture is not too thin.
Pour 1/4 cup batter into hot pan; brown on both sides.
