Orange Quick Blender Cake
Makes one 8-inch loaf cake

This quick bread is just that, super quick, super moist, easy and fluffy cake made in your kitchen blender.
1/2 cup brown sugar
1/2 cup vegetable oil
1 tbsp. baking powder
1/4 tsp salt
¼ cup of milk
1 tsp Mexican Vanilla extract
1 medium orange – juice and zest
1 1/3 cup of All-purpose flour.
Preheat your oven to 350°
Prepare and grease your cake mold. Get your cake pan ready with cooking spray or a little oil or butter, then add flour to dust to prevent it from sticking to the pan.
Using a medium to large blender cup, add the 3 eggs, sugar and oil. Blend for 3 min so that the sugar is dissolved and the liquid is emulsified.
Stop and add the baking powder, salt, milk, vanilla, orange juice and zest.
Blend it again for an additional minute until it is well mixed. It is important that the mixture looks light in color.
Then finally add the flour. The flour can be added in 3 equal parts, all in the blender, just make sure after each time you add flour, scrape down with a spatula any lumps of flour to get it all mixed well.
Another important point, when we add the flour, this step should be just enough to blend in the flour, do not over mix. The over mixing of the flour will result on a rubbery cake so try to blend the flour into the liquid with as little of mixing possible and just enough to incorporate the flour with the liquid.
Pour the batter into your prepared cake pan and bake for 25 minutes and until cake is golden in
color and it springs back up and firm when carefully touching it with your fingers.
You can also do the toothpick (or paring knife) test.
While you may have grown up watching someone in the kitchen insert toothpicks or long skewers into cakes to test for doneness, toothpicks don’t have very much surface area. Consider using a paring knife right in the center of the cake to check for doneness, which more clearly reveals under baked crumbs. A knife is especially helpful if you’re baking a cake or quick bread made from a thick batter, like pound cake or banana bread.
