Aerated Cheesecake

Exclusive recipe for for the Posh Kitchen TV show complements Executive Chef Bobby Tampier.

Chef Martin Had the pleasure of making this dish on set with his good Friend Executive Chef Bobby.

Cheesecake (Yields 9 individual cakes)

12 oz. Cream Cheese

4 oz. Sugar

2 oz. Cream

4 oz. Whole Egg

½ oz. Sour Cream

1 tsp. Vanilla Extract

Graham Cracker Crust

4 oz. Graham Cracker-Pulsed into FINE crumb

3 oz. Melted Butter

Cream sugar and cream cheese until fluffy. Scrape bowl and paddle until smooth. Add the heavy cream; scrape bowl. Add sour cream and vanilla. Add eggs in small amounts. Scrape well.

Pour batter in greased, lined, crusted, pan. Place in a water bath and bake at 350 until center is firm (about 20-25 min)

Raspberry Sauce

1 cup Fresh Raspberries

½ cup sugar

2 Tbsp. water

1 Lemon-zested and juiced

Add first three ingredients in small sauce pot. Cook down until raspberries lose their bitterness. Add Lemon Juice and Zest. Strain and Cool.

Plate Cheesecake, add Raspberry Sauce, Fresh Berries, and Whipped Cream.
